Orechietti con Cime di Rape – by Mino Maggi with Rick Stein

Mino is well known chef in the region and lives about 20 minutes from Trullo Adagio on the outskirts of a town called Locorotondo. And if you’ve been late getting up today (Saturday) and were eating your cornflakes whilst watching Saturday Kitchen, you will have seen Rick Stein chatting with Mino about the simplicity of ‘cucina povera’.
Orechietti is a pasta shape (little eares!) typical of Puglia and Cima di Rapa (turnip tops!) is found in markets all over the region. In the UK we often substitute brocoli in its place.
