From 300 meters away I could just make out jangling bells… curious, I investigated armed with my camera and found these Podolica grazing watched by their owner and his little dog. Podolica are a local rare breed much prized by the locals.
Mozzarella is the normal purpose of buffalo milk but in Puglia, particularly in this region of Puglia, Burrata is the prized desired result. Described by Jamie Oliver as the ‘King of Mozzarella’ it is a soft, stringy cheese with a centre of creamy, gooey indulgence!
